Alor Wild Bee Honey
Alor Honey is a specialty local honey produced in several regions in Indonesia, including Sumatra, Borneo, Sulawesi, Papua, NTB, and NTT. Alor honey has a unique flavor due to the characteristics of the bees (Apis Dorsata) producing them. Living as wild bees, these particular species made their nests high-up in tall forest trees, stones, and caves. Their diet consists of flower essence derived from native plants, such as Cajuput leaves, Candlenuts, and Jati wood. The production of Alor honey is still relying on ancient, traditional method of “Panen Tiris”, in which a small square incision is made on each bee’s nest to slowly extract honey while maintaining the bee’s nest. The small incision is then cut horizontally and place on a cotton cloth to to maximize extraction and natural processing of honey. This process gives Alor Honey its signature wet forest smells, moist texture, and bittersweet taste.
